Trevor and Fergus are very much involved in the day to day operations at all of our restaurants, their office is based above the original St. JOHN in Smithfield though both travel site to site on most days and make a point of dining regularly at each.

Working alongside Trevor and Fergus is a team of experienced and dedicated chefs, managers and front of house staff some of whom you can contact directly below.

Chris Gillard has been the head chef at St. JOHN since 2003.

Chris works closely with his brigade of chefs and pastry chefs composing the menu on a daily basis and led the St. JOHN kitchen to achieving it's first Michelin star in 2009.

Stephanie Romanes joined Smithfield in December 2011 from L'Autre Pied in Marylebone. Stephanie heads up our dining room team and will be delighted to assist with enquiries regarding larger and private functions at St. JOHN. Emma Renton joined St. JOHN in 2010 and as our hotel project developed in Chinatown took over as bar manager at Smithfield. Emma came to St. JOHN following a career managing The Engineer in north London.
